Does Artisanal Vinegar Expire?

The Short Answer is "Never" (With a Catch)


We hear this question often: When does this bottle of vinegar actually go bad? The truth? Vinegar has an indefinite shelf life. Vinegar is essentially a self-preserving liquid, so it won’t "spoil" in the traditional sense. However, as an artisanal product, its flavour profile is alive and can shift depending on how you store it.

Science of Staying Fresh


An unopened bottle of vinegar is a pantry powerhouse. The primary ingredient, acetic acid, is nature’s original preservative (just look at how it keeps pickles crunchy!).

In many ways, high-quality vinegar is like a fine wine—it's flavour improves with age. Letting an unopened bottle rest in a cool, dark place for a couple of years can:


  • Mellow the acidity: Making it softer and more complex on the palate.

  • Enhance the bouquet: Allowing deeper, more subtle aromas to develop.


Why Oxygen and Temperature Matter


Once you open the bottle and room oxygen enters, the vinegar’s peak flavour starts to slowly degrade. This effect is very slow at refrigerated temperatures – think several months. However, if your opened bottle is stored in your warm kitchen the acidity will drop, and the vibrant flavour will begin to flatten until it essentially tastes like water. While this isn't a food safety risk at all, it’s a culinary tragedy.

Wait, Is That an Expiration Date?


You may be wondering about the small white tag on our bottles. While many people mistake this number for an expiration date, it is actually our internal batch code. Because we are a true artisanal producer, we craft our vinegar in very small batch runs—often just a few hundred bottles at a time. This code allows us to meticulously track our production and ensure that every single bottle meets our high standards of quality.

Of course, if you’re using our vinegar every day for salads, marinades, sauces, and reductions, you probably won't have to worry about the shelf life at all. Just keep pouring and enjoy!
